Sweet and Sour Pork

Ingredients

  • 500g Hodghurst Farm Diced Pork
  • Bunch Spring Onions
  • 2 Carrots
  • 200g Mushrooms
  • 1 Red Pepper
  • 1 Courgette
  • 1 Tin Pineapple chunks in juice
  • 200ml stock
  • 2 heaped tsp cornflour

Method

  1. Par boil carrots for 5 mins
  2. Fry Spring onions, mushrooms, pepper, courgette until softened.
  3. Add pork, fry until cooked through.
  4. Add pineapple & juice and stock
  5. Simmer for 5-10 mins
  6. Mix cornflour with a little water to make a paste.  Add to pan and simmer for a further 5 mins.
