Sweet and Sour Pork
Ingredients
- 500g Hodghurst Farm Diced Pork
- Bunch Spring Onions
- 2 Carrots
- 200g Mushrooms
- 1 Red Pepper
- 1 Courgette
- 1 Tin Pineapple chunks in juice
- 200ml stock
- 2 heaped tsp cornflour
Method
- Par boil carrots for 5 mins
- Fry Spring onions, mushrooms, pepper, courgette until softened.
- Add pork, fry until cooked through.
- Add pineapple & juice and stock
- Simmer for 5-10 mins
- Mix cornflour with a little water to make a paste. Add to pan and simmer for a further 5 mins.
