Homemade Chicken Stock
Ingredients
- 1 Hodghurst Farm Chicken Carcass & Giblets
- 1 Carrot
- 1 Stick of Celery
- 1 Onion
- tsp Black Peppercorns
- 1 Bouquet Garni
Method
- Chop carcass, carrot, celery and onion into large chunks
- Put in ovenproof casserole dish with giblets
- Add peppercorns and bouquet garni and cover with water
- Leave in low (100c) oven all day or overnight
- Strain, then simmer juices down until reduced by at least half
- Chill in fridge, then remove fat from the top
- Freeze in portions
