Homemade Chicken Stock

Ingredients

Method

  1. Chop carcass, carrot, celery and onion into large chunks
  2. Put in ovenproof casserole dish with giblets
  3. Add peppercorns and bouquet garni and cover with water
  4. Leave in low (100c) oven all day or overnight
  5. Strain, then simmer juices down until reduced by at least half
  6. Chill in fridge, then remove fat from the top
  7. Freeze in portions
