Bacon & Lentil Soup
Ingredients
- 450g Hodghurst Farm Streaky Bacon, rind removed and chopped into small pieces
- 1 Onion, roughly chopped
- 1 Stick Celery, chopped
- 1 Sweet Potato, roughly chopped
- 1 Potato, roughly chopped
- 1 Carrot, roughly chopped
- 75g Lentils
Method
- Cook bacon and onion in a saucepan
- Add veg and lentils
- Cover with water, bring to the boil and then simmer for 1-2 hours until lentils are tender.
- Puree until smooth
